It's been a while...

I was so busy that i almost forgot to update my blog...

And also I've been reading a book for days now and i highly recommend it to all. The book is entitled "Purpose Driven Life" by Rick Warren. It's very inspiring and enlightening...It'll take you to a true journey in life. Get a time to read this book, you might wanna know your true purpose in life... It might surprise you, if it's not what you always believe from the start.

Healthy Recipe

I've been searching for healthy recipes for the family check out what i found....

Crispy Tofu and Vegetables




Ingredients

    * 1  12- to 16-ounce package light, reduced-fat, or regular extra-firm tub-style tofu (fresh bean curd), drained
    * 3  tablespoons reduced-sodium teriyaki sauce or soy sauce
    * 2  cups fresh snow pea pods (8 ounces)
    * 1/4  cup yellow cornmeal
    * 1/8  teaspoon ground red pepper
    * 2  teaspoons toasted sesame oil
    * 1  medium red sweet pepper, cut into thin strips
    * 1  medium yellow sweet pepper, cut into thin strips
    * 8  green onions, cut into 2-inch pieces
    * 2  teaspoons cooking oil
    * 1  tablespoon white or black sesame seed, toasted (optional)

Directions

1. Cut tofu crosswise into eight 1/2-inch-thick slices. Arrange slices in a single layer in a 2-quart rectangular baking dish. Pour 2 tablespoons of the teriyaki sauce over tofu; turn slices to coat. Let stand at room temperature for 15 minutes.

2. Remove strings and tips from pea pods; cut in half. Set pea pods aside. In a shallow dish combine cornmeal and ground red pepper. Drain tofu, discarding marinade. Carefully dip tofu slices in cornmeal mixture; press gently to coat both sides. Set tofu slices aside.

3. Pour 1 teaspoon of the sesame oil into a large nonstick skillet. Preheat over medium-high heat. Stir-fry sweet pepper strips for 2 minutes. Add pea pods and green onions; stir-fry for 2 to 3 minutes more or until crisp-tender.

4. Remove skillet from heat; stir in the remaining 1 tablespoon teriyaki sauce. Transfer vegetable mixture to a serving platter; cover and keep warm. Wipe skillet clean.

5. In the same skillet heat the remaining 1 teaspoon sesame oil and the cooking oil over medium heat. Cook the coated tofu slices for 2-1/2 to 3 minutes on each side or until crisp and golden brown, using a spatula to turn carefully. Serve tofu slices over vegetable mixture. If desired, sprinkle with sesame seed. Makes 4 servings.

Father Giancarlo Bossi Released

Today is not a typical day for the Church of God. Finally, the long prayers for the released of Father Giancarlo Bossi was answered early this morning. After 40 days under the hands of his captors, he told the press, that he was treated with respect by his kidnappers. Despite all that had happen, he would still love to go back to Payao and serve the people and continue his mission. Father Bossi considered this day as a gift from her mother who is celebrating her 87th birthday in Italy...

Florence Nightingale

Ever heard of her name? In my case, i had no clue who she was until last wednesday. It was a wonderful day for my sister who had her capping and candle lighting. Early that day, i heard couple of students asking where is Florence Nightingale. Who? Until, the most awaited part of the celebration came... A Registered Nurse, wearing a  long pink gown with cap on her head, carrying a huge lamp with a candle walked in the aisle...From that moment, my question was finally answered as Florence Nightingale was introduced portrayed by the woman walking through the red carpet and realized that she is a great inspiration to all women and nurses...

for those who are still wondering... here is a brief  story about Florence Nightingale.

Florence Nightingale was the daughter of a well-to-do family in England. They wanted her to become a socialite; to learn to give big parties and serve tea. Florence, however, had other plans. When she told them she didn't want this kind of life, her parents became very angry and her sister went into hysterics .

By the time she was 12, she was determined to "do something worthwhile". She liked books. She enjoyed caring for sick farmers on her father's estate. Once she even saved the life of an old shepherd's dog that had broken its leg.

At the age of 16, she was sure that God was calling her to serve others. She used every spare minute to learn from nursing books she had secretly obtained. She visited hospitals in London and the surrounding area.

Her parents didn't want her working in those "dirty" hospitals, but she was determined. They did many things to try to change her mind. Her sister pretended to have fainting spells. Her mother accused her of being immoral * .

She finally reached an agreement with her father. If he would let her go to Kaiserwerth (KI zer wirth) hospital in Germany to study, she wouldn't tell anyone her plans. This way, her family wouldn't have to be "embarrassed" * by her actions.

She was an excellent student, and after her graduation, she returned to London and got a job running a hospital.

During the Crimean (cry ME un) War, she was put in charge of nursing. She went to the battlefield with 38 nurses. The hospital was a huge, dirty barracks * building. She got men to clean it up and managed to get the supplies they needed.

She carried a lamp as she walked the halls of the battlefield hospital and became known as the "lady with the lamp".

She saved thousands of lives. People called her a ministering angel in the hospitals, but she herself became ill with a disease she got there.

In her later years she was not able to travel, but people came to her from all over the world for her advice.

During the Civil War, the United States asked her advice about setting up military hospitals.

She became known as the founder of modern nursing.

The solemn celebration was held at our Parish Church, Saint John the Baptist Parish Church and ate the lunch out together with some of my sissy's friends and our new found relatives from Sorsogon.

First entry...

At last! After several weeks, finally here comes my first ever entry....That's because i have more time now after quitting my job as a web marketing analyst. I've been a working mom, a businesswoman, a mother and a wife at the same time.. So i guess, you know why i have to leave my work....
